This 5-ingredient slow cooker beef brisket recipe makes the most tender, flavorful brisket you’ll ever have! A juicy,  falling-apart brisket slow-cooked with a savory BBQ dry rub, finished under the broiler for that trademark bark!

Slow Cooker BBQ Beef Brisket

If the weather near you hasn’t quite hit the appropriate temperatures for outside cooking, this slow cooker beef brisket recipe will satisfy that craving for tender, smoky meat. You may wonder how it’s possible to replicate that trademark smoky flavor when cooking a brisket in the slow cooker, but here’s my secret. A few minutes in the oven on broil gives that perfect finishing touch – a dark, smoky bark all along the outside of the fall-apart tender brisket.

The simple ingredients and mouth-watering flavor totally make up for the long cooking time.

Ingredients for Slow Cooker Beef Brisket Recipe

Would you believe me if I told you this recipe only calls for FIVE ingredients?! It’s true! All you need to do is toss everything together and let that baby cook overnight in your slow cooker, and the result is simply the best BBQ flavors soaked into tender, buttery beef brisket. You can find the exact ingredient measurements in the recipe card at the end of the post. Here’s everything you need:

  • Beef Brisket: I use a 7–8-pound brisket, which fits into my slow cooker and makes plenty of leftovers.
  • BBQ Dry Rub: I use my very own Rosamae Seasonings BBQ rub, which is a mix of all the classic BBQ seasonings. This trademark rub is the same dry rub recipe I’ve shared before, so you can make it homemade too if you choose!
  • Olive Oil: helps the dry rub stick to the brisket.
  • Apple Cider Vinegar: helps to tenderize the meat and gives the brisket that signature BBQ joint flavor.
  • Liquid Smoke: just a few tablespoons of this stuff replicates that fresh-off-the-smoker flavor you’d get from traditional barbecued brisket.

Should I use a flat-cut brisket or a point-cut brisket for this recipe?

A point-cut brisket is the traditional beef cut used when making a smoked brisket, but either cut will work for this recipe! Flat-cut brisket is typically larger than point-cut, so if you’re planning on feeding a larger crowd, go with the larger cut (just keep in mind the cooking time might vary).

Does this slow-cooker beef brisket recipe need any cooking liquid?

No, it does not! The brisket will release plenty of liquid as it cooks, which will also help to keep the meat nice and tender throughout the longer cook time. I do use a small amount of apple cider vinegar, which adds some additional liquid. If you don’t love the vinegar flavor, swap it out with water or beef broth.

What is the best dry rub for brisket?

A nice, flavorful, savory BBQ rub, in my opinion! If you have a favorite brand or seasoning that’s tried-and-true in your home, feel free to stick with that. My own recipe of dry rub includes the basics: brown sugar, salt, black pepper, onion powder, garlic powder, paprika, and cayenne pepper. The secret is using a lot of dry rub, because that flavorful coating on the outside turns into the most delicious bark when broiled for a few minutes at the end of the recipe.

How to Make Slow-Cooker Beef Brisket

The hours of slow cooking will pay off once you cut into this tender, juicy beef brisket! And it’s truly so easy to make – no babysitting a smoker or oven, constantly temping, turning, and watching your brisket cook. Let’s get on into it.

First, Make the Seasoning Rub:

Mix the dry rub seasoning with 2 tablespoons each of olive oil and apple cider vinegar, and 1 tablespoon of Liquid Smoke. This will turn the seasoning mixture into a paste. Rub those savory seasonings all over your brisket, making sure to cover the whole cut of meat.

Prep the Slow Cooker:

Once the brisket is nice and well-seasoned, prep your slow cooker with some nonstick cooking spray. I’m using a 6-quart slow cooker with plenty of room for my 7-8-pound brisket. If you’re planning on making a larger brisket, you’ll likely need a larger slow cooker.

Slow Cook the Beef Brisket:

Set your slow cooker to LOW and cook that baby for 12 hours. When something has this long of a cooking time, I plan to start it the night before and let it cook overnight. The next day, I have dinner ready to go right off the bat.

Broil the Brisket for a Perfect Finish:

The last step is to broil the brisket for just a few minutes to get that signature smoky crust on the outside. Once the brisket is cooked, transfer it to an aluminum foil-lined sheet pan and place it under the broiler for 3-5 minutes, or until that dark crust forms across the top of the brisket.

Let the Brisket Rest:

Once the brisket is nice and crusted with that savory, smoky bark, wrap it in the foil and LET. IT. REST. This is the most important step to get that tender, juicy brisket. All the juice soaks back into the meat, leaving it oh-so-moist and flavorful. I typically let it rest for at least an hour before slicing and serving!

Slow Cooker Brisket Recipe Tips and Tricks

Cooking beef brisket doesn’t have to be hard or intimidating – that’s exactly why I love this Crockpot beef brisket recipe! It takes all the hard work out of making a delicious meal. As usual, I want to share some Cousin Rosie tips and tricks, as well as answer some FAQs from y’all! If there’s anything specific you want to know, drop a comment down below!

  • Low and slow is the way to go if you want the best brisket you’ve ever had. Don’t try to rush the cooking time! Depending on the size of your brisket, it can take anywhere from 10 to 14 hours to cook on low heat, so plan ahead.
  • Knock it out of the park by pairing your slow cooker beef brisket with BBQ sauce. You can use your favorite store-bought sauce or whip up a homemade barbecue sauce.
  • If you don’t like the flavor of Liquid Smoke, you can leave it out or swap it out with an equal amount of Worcestershire sauce or soy sauce. Either one will give you the same savory, umami flavor that tastes oh-so-right with brisket.
  • This brisket will be tender enough to shred, but hold together well enough to cut into nice, thick slices. I personally prefer to serve brisket thick cut.
  • If your brisket isn’t fork-tender, it needs more time to cook. It’s hard to overcook a brisket – the longer it cooks, the more tender it becomes! The perfect internal temperature for juicy, tender brisket is 195°F to 205°F.
  • You can prep by seasoning the brisket with the dry rub and letting it sit in the fridge overnight or for up to 1 day. When you’re ready to make the brisket, take it out of the fridge and toss it into the slow cooker.

What can I make with leftover brisket?

The possibilities are truly endless when you have leftovers of this delicious slow-cooked beef brisket. You could make a savory beef brisket chili, brisket nachos, or a leftover BBQ charcuterie board. Toss together some brisket tacos or shredded BBQ brisket sandwiches. You could even swap it for ground beef in some recipes, like this Tex-Mex skillet recipe or beef pot pie recipe.

What are the best side dishes to serve with Crockpot beef brisket?

Just about anything you’d serve at a good ol’ fashioned BBQ will pair perfectly with slow-cooked brisket! Some of my favorite sides are:

Ingredients

  • 7-8 lb beef brisket
  • 3 tbsp Rosamae Seasonings BBQ Rub
  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp liquid smoke

Instructions

  • Mix the dry rub seasoning with 2 tablespoons each of olive oil and apple cider vinegar, and 1 tablespoon of liquid smoke.

  • Once the brisket is nice and crusted with that savory, smoky bark, wrap it in the foil and LET. IT. REST.
  • Let the brisket rest for 1 hour!
  • Serve and enjoy!

            Instead of putting it under the broiler at the end, could I sear it first before putting it in the slow cooker?

            When it cooks in the slow cooker, it will release liquid. So searing before won’t keep it crisp. If you want a crisp outter part, the oven is a must. 🙂

    Hi!

    So I made this for my husband monday night and was ready for him to take burritos to work, tuesday morning. He absolutely!!! Loved them! Now problem is, im making his lunch today and since the brisket has sat over night in the fridge , it doesnt have same juciness and flavors it had tuesday.. And since his coworkers now just how good the burritos were, he wants me to make a few extra for a few of them. How can i fix the dryness and bring that flavor back , from the brisket sitting in the fridge over night? Fyi i shredded it (all) maybe thats why its dry…. But next time i wont…. Please help!

    I just made your salsbury steak recipe it came out awesome, this is the next one i want to try But my husband is from southeren Texas he doesn’t like vinager tasting brisket can i leave the vinager out? Is there something else i should add ti replace the liguid in the slow cooker?

Is this the same as Beef Brisket? The picture did not look like a Corned Beef Brisket. Thank you for your help.

      Hi Jewel! No, this isn’t corned beef. This is beef brisket. Corned Beef is cured in salt & sugar. This is not.

    Im backkkkkkk! lol! So i took your advice and i kept
    The juice from the brisket to keep it moist, it was such a hit the first time lol I literally made it three times in about a week maybe a week in a half because my husbands coworkers absolutely loved it lol. Someone even asked if i could make a 13-14lb brisket for him, i was like ummm i dont know about that lol, i am brisketed out. But i loved it and so did my husband and his coworkers, so thank you for the tips. HEY! Do you have a one bake recipe like veggies and meat all in one dish? I saw one on fb, this woman had salmon with corn , broccoli, red potatoes and it actually looked pretty good. She used olive oil, parsley, old bay, butter …. Id love to see your spin on a dish like that! Thank you again!!

    What do you think about putting the rub on the brisket and letting it set overnight in the frig. Then popping it in the slow cooker in the morning to cook? Would the flavors be too intense? Would it change the texture of the meat? Anxious to try it. Have a brisket thawing in the frig now.

    This recipe rivals, if not surpasses other briskek dishes I’ve had, including those from BBQ establishments. People’s tastes for things will always be subjective, but for those who know what they want in a roast or any other recipe involving their favorite cuts of meat, they can tell almost right away just by looking at the recipe and I already knew by looking at yours! The rub alone was delicious!!! Thank you for a FANTASTICK Brisket recipe!!!

    Hi Rosie! I’m about to give your recipe a try. I have a 5 pound brisket. Is 12 hours on low too long? I noticed the brisket in your sample recipe is 8 pounds. Also, will I have any issues with cutting the brisket while it’s hot? Lastly, I have an internal temperature gauge. What should the internal temperature of the Brisket be after cooking. Thank you!

      Hey there Aaron. You have a lot of technical questions. LOL! No need for all he headache. Simply reduce the cooking time by 2 hours or so. Let the brisket rest for a while before cutting it.

    Hi Rosie!
    I found this recipe on Pinterest, and I have 2 crockpots almost done. (My dad gave us a Huge brisket and I had to cut into 3 pieces to fit my crockpots.)
    My question is: once done, can I leave in the crockpot a while and then put it into the oven to create the Bark? It’s gone from midnight until noon.

    Thank you for your help! And the deliciously smelling house!

    This was flippin’ awesome. I was out of liquid smoke but substituted smoked paprika so probably a similar effect. Couldn’t believe how it tasted and carved like authentic smoked bbq. Will be using this recipe again.

    Wow!!! I was skeptical at first, but since my husband didn’t make it over the weekend (in the smoker), I decided to try and have meat ready for dinner today (Tuesday) before it was “too old”; if it wasn’t for brisket sandwiches, I could at least shred it and make tacos, but…

    It was awesoooooome!! I can say that it was better than the one in the smoker!! Thank you for the recipe, delicious!!
    The fat tasted great and kept the meat super moist!

      Hi Ronnie! Please note that this recipe is NOT corned beef. This is a regular beef brisket, which does not come with a package of seasoning 🙂

    Hi Rosie, just made my brisket and it looks fab. I’m just letting it rest at this point. I was wondering how do you store your leftover brisket? Should I pour some of the leftover juices over the brisket to keep it moist? The “juices ” looks to good to waste. Thanks in advanced for the pointers.

    I made this last night/this morning. This was my first brisket ever, so I chose this recipe carefully. I bought the brisket on sale, and since I knew nothing about brisket I had the butcher choose it for me. I followed the recipe to the letter and I have to say that I was skeptical about the bark part, I didn’t see how it could make a nice bark after being in the crock pot all night. I put it under the broiler, and voilà! It barked! Woof! Now, I’m a believer! My very first attempt at a brisket was highly successful due to your video/recipe! This is better than any brisket I have ever eaten!

      Yes! You can make it ahead of time. Simply warm it up in the oven on 325 F until it’s warm.

        Hi again Rosie,

        Here’s my plan for making ahead:
        1. Cook in slow cooker at 6pm the evening before (for a 6pm next day party).
        2. Take the brisket out of slow cooker at 6am.
        3. Rest at room temprature till 5pm.
        4. Broil according to intructions and let it rest before slicing.

        What do you think? Will the brisket dry out at Step 3?

    I had given up on brisket , I had a piece in the freezer and had to use it . I came across your recipe and tried it !! OMG Rosie !     My husband bought a salt and pepper brisket at Aldi, I think it’s already rubbed with salt and pepper if that makes sense. Would I need to adjust the rub so it doesn’t get too salty or too peppery? Thanks!

    I never leave reviews but just had to after I tried your recipe!! WOW!! I put the rub on the night before and let it marinate in the fridge. Added some cumin and hot and sweet paprika. Put the brisket over a bed of sliced onions, then pureed the juices and onions. The brisket with the bark was soooo good. So juicy!! Great flavor too!! I’ve been missing my smoker but this more than did the trick!! Thanks for a wonderful recipe!! Posted a picture of it on your Pinterest recipe site!

    Excellent. Great flavor. 2.27 lb. 6 hours- 4 hours wrapped- 2 hours unwrapped. I did NOT trim fat cap, usually I do. I had lots of juice when I unwrapped. I injected some back into the meat while the slow cooker perfectly darkened the brisket. I usually smoke my briskets. My husband said this was my best brisket yet. Fell apart – so juicy and lots of flavor. ❤️❤️❤️

      – If your brisket is frozen, make sure to transfer it to the fridge a couple of days ahead to thaw it out slowly.

      – Before reheating, let the brisket sit out to reach room temperature, which takes about 30 minutes to an hour. This helps it heat evenly.

      -Preheat your oven to a low temperature, around 250-300°F. The low and slow approach is key here.

      – Wrap the brisket in foil. Tip: adding a bit of beef broth or its original juices can keep it nice and moist.

      – Place it in the oven. It might take around 45 minutes to an hour, but start checking at 30 minutes to avoid overcooking.

      – Aim for an internal temperature of about 165°F. A meat thermometer comes in handy for this.

      – Give it a 10-minute rest after taking it out of the oven. This step is crucial for juicy brisket.

      – For the best texture, make sure to slice the brisket against the grain.
