Tender, super moist beef brisket made in the slow cooker with amazing bark!
A Classic Recipe for Slow Cooker Beef Brisket!
Hey friends! I have a spring and summer friendly recipe that you all are going to love! I’m going to show you how I make my super tender, mouth watering beef brisket in the slow cooker. This recipe is super easy and straight forward. It’s almost impossible to mess this up. I use my Rosamae BBQ Rub for my brisket along with apple cider vinegar, liquid smoke, and olive oil. I mixed the ingredients, and rub it all over the beef brisket, and let it cook overnight in my slow cooker. I then remove the brisket from the slow cooker, and place it in the oven on broil to darken the bark. The outcome is a melt in your mouth – seasoned to perfection – smokey brisket. I kid you not, this brisket is just as good as smoked brisket!
How to Make Slow Cooker Beef Brisket
Ingredients and Instructions
You will need 2 tbsp olive oil, 2 tbsp apple cider vinegar, and 1 tbsp of liquid smoke. Combine it with my homemade barbecue seasoning (Yes…ALL of it).
Once everything is mixed, rub it all over a 7-8lb beef brisket. I left the fat on my brisket (because I believe that it adds flavor) but you can trim it off if you want to!
Once the seasoned mixture is rubbed all over the brisket, spray your slow cooker with non stick spray.
Next place the brisket into the slow cooker, set the slow cooker on low, and let it cook for 12 hours.
Once done, there will be a lot of juice from the brisket in the pot. Carefully remove the brisket from the slow cooker, and place it in a foil-lined dish.
Turn your oven on broil, then place the brisket in the oven . Let it stay in there long enough until the “bark” (the rub) darkens.
Once done, remove the brisket out of the oven, and cover it with foil. Let it rest for 1 hour!

Slow Cooker Beef Brisket
Ingredients
- 7-8 lb beef brisket
- 3 tbsp Rosamae Seasonings BBQ Rub
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp liquid smoke
Instructions
- Combine the olive oil, apple cider vinegar, liquid smoke, and bbq rub.
- Once everything is mixed, rub it all over a 7-8lb beef brisket.
- Next, spray the slow cooker with nonstick spray.
- Place the beef brisket in the slow cooker.
- Set the slow cooker on low and let cook for 12 hours.
- Once done, carefully remove the brisket out of the slow cooker.
- Place the brisket in a foil line baked dish.
- Turn your oven on broil, then place the brisket in the oven. Let it stay in there long enough until the ” bark” ( the rub) darkens.
- Once done, remove the brisket out of the oven, and cover it with foil.
- Let the brisket rest for 1 hour!
- Serve and enjoy!

When it cooks in the slow cooker, it will release liquid. So searing before won’t keep it crisp. If you want a crisp outter part, the oven is a must. 🙂

Fixed this and it was amazing! It browned in the slow cooker so putting it under the broiler wasn’t necessary. Easy peasy and oh so good!

Now problem is, im making his lunch today and since the brisket has sat over night in the fridge , it doesnt have same juciness and flavors it had tuesday.. And since his coworkers now just how good the burritos were, he wants me to make a few extra for a few of them. I made this last night/this morning. This was my first brisket ever, so I chose this recipe carefully. I bought the brisket on sale, and since I knew nothing about brisket I had the butcher choose it for me. I followed the recipe to the letter and I have to say that I was skeptical about the bark part, I didn’t see how it could make a nice bark after being in the crock pot all night. Here’s my plan for making ahead:
1. Cook in slow cooker at 6pm the evening before (for a 6pm next day party).
2. Take the brisket out of slow cooker at 6am.
3. Rest at room temprature till 5pm.
4. Broil according to intructions and let it rest before slicing.
What do you think? Will the brisket dry out at Step 3?

Excellent. Great flavor. 2.27 lb. 6 hours- 4 hours wrapped- 2 hours unwrapped. I did NOT trim fat cap, usually I do. I had lots of juice when I unwrapped.
