Southern, soul food style smothered oxtails. Smothered in a homemade onion and garlic gravy, and slow cooked in the Crock Pot until they are falling off the bone tender!
There’s something about southern oxtails and gravy that just comforts my soul. No seriously! If I’m not feeling well, or If I had a bad day just the simple thought of oxtails and rice makes me feel better. My mom used to make oxtails all the time. Especially for Sunday’s supper. She’d serve the oxtails with her infamous southern style potato salad, mixed greens, and corn muffins. We’d tear up dinner like there was no tomorrow! The only thing that would be left on our plate would be the bones, and not string of meat! It was the best! It was, and still is one of my soul food dishes.
Over the years I’ve made smothered oxtails plenty of ways, but I finally found a recipe that I’m going to stick with. No more revising, no more adding ingredients, nor steps. I have finally have a to go to recipe for oxtails. This is definitely my favorite southern smothered oxtail recipe.
This recipe is super simple. Unlike a lot of other soul food style oxtails, I don’t use a ton of ingredients. Also, I use very basic ingredients such as garlic, kosher salt, and onions to season up the oxtails & gravy. To make everything super easy, I use my slow cooker. This prevents me from standing in the kitchen all day. Everything about this recipe is golden!

Southern Smothered Oxtails
Ingredients
- 2 1/2 pounds beef oxtails
- 1 1/4 cups all purpose flour
- 2 tbsp worcestershire sauce
- 2 tsp kosher salt
- 1 tsp freshly cracked or ground black pepper
- 3/4 cup vegetable oil
- 3 cups beef broth OR water
- 1 large yellow onion sliced
- 3 cloves of fresh garlic minced
- * more salt & pepper for taste
Instructions
- Season the oxtails with 2 tsp kosher salt, and 1 tsp black pepper.
- Drizzle the worcestershire sauce all over the oxtails, then toss the oxtails to make sure that they are coated.
- Next, sprinkle 1/4 cup of flour all over the oxtails, and make sure that the oxtails are coated with the flour.
- Next pour the vegetable oil into a large pan, and place the pan over medium heat.
- Once the oil is nice and hot, add the oxtails in, and brown them.
- Once the oxtails are nice and brown remove them from the pan, and put them in the slow cooker.
- Return back to the pan with the hot oil.
- If they are burnt pieces in the pan, pour out the oil, strain, clean the pan, then pour the strained oil back into the pan.
- Start adding the remaining flour into the pan, but only a little bit at a time.
- Whisk continuously.
- Once the flour is brown, and resembles " chunky peanut butter", slowly pour in the beef broth or water.
- Whisk while you pour!
- Make sure everything is lump free, then turn the heat from medium to high.
- Once the gravy reaches a full boil, reduce the heat to medium, and add in the sliced onions, and garlic.
- Stir the gravy, and do a taste test.
- Add as much salt & pepper that you think you may need.
- Turn the heat off, and pour the gravy into the slow cooker covering the oxtails.
- Make sure that the oxtails are nicely covered with gravy, then set the slow cooker on high.
- Let cook for 8 hours.
- Once done serve with mashed potatoes, rice, or whatever you'd like.
- Enjoy!

If the recipe was followed there should be enough gravy. You can make more if needed.
OMG I made these yesterday..my hubby called me from work to say he LOVED the gravy..it was my first time making them..my gravy on the stove was thick do I had to use more than 3 cups of water..did I do something wrong? Yes a friend of mine slow cooks them in the oven, but I only trust myself with the crockpot. I am trying these I was looking for a simple recipe like my mom used to make. I have done the Jamaican style and Cuban styled both good but I wanted a simple southern style recipe, this will do it I’m sure. I will cook and provide update. I want to eat them with rice and Okra, tomatoes and corn.

Sounds like you either didn’t cooking it long enough, or the temperature isn’t on the correct setting.

I have made oxtails using your reciepe twice and the oxtails themselves came out perfect, the flavor is there and on both occasions the oxtails were tender but for some reason about half way through the cooking process I realize my gravy is no longer thick and it just looks really oily. The second time around I did change the gravy and use less oil but I still had the same result, what am I doing wrong?????
Hi Lakisha! Make sure that you trim most of the fat off of the oxtails before you cook them. That should do the trick 😉
Rosie, one thing some people might be doing wrong is adding the liquid too fast to the flour. After moving to Cajun country, I learned that when making a roux, you have to slowly add your liquid to the flour when making a roux or it will separate later on in the cooking process. You did say to add it slowly in step number 11 but some might have overlooked that. Fabulous recipe!

I’ve made your recipe twice now. The first time they were absolutely amazing.However the second time, the gravy was still comparable to peanut butter. It ended up tasting like flour.
Now on my third attempt, I feel defeated, because the gravy is still too think, literally resembling play-doh.

Those oxtails are excellent . I found that on high the oxtails were done in about 5-ish hours. Maybe it changes depending on your slow cooker. But a great recipe packed w flavor. Thanks

I made your southern smothered oxtails yesterday for Sunday dinner. It was the best oxtails I have ever eaten. Dear Lord it was so good! Thank you for sharing this recipe! I really mean it. We do a lot of cooking and we eat well! We know an outstanding dish when we taste it. I modified it only in the fact that I did not use a slow cooker. I prepared the whole dish in an enameled cast iron pot. After browning the oxtails, I deglazed the pot with meade and some beef stock. Then made the gravy, added the oxtails back to the pot with the thickly slice onion and crushed garlic, covered the meat with stock and into the oven for 3.5 hours. It was heaven in my mouth, I cannot stop thinking about it and can’t wait to polish off the leftovers this evening! Thank you Rosie and God Bless you and yours!

I made this. Very good recipe . This is a do over for sure. I Had to make it gluten-feee so I used
King Aurthers all purpose GF flour. The only thing I would suggest if using gluten free flour is to use half the amount as it thickens more than normal flour. Thank-You for a great recipe. A new favorite for my family .

Rosie! You got people thinking I have an old soul with this recipe.! Its lie a special event when I make your tails. Ive made it 3 or 4 times and turned out great every time. I marinade for a few hours the tails in the Worcestershire sauce, salt and pepper before browning on all sides. At 8 hours I pour off almost all the greasy sediment and replace with beef broth and let cook for another 4 hours. Also Ive been using bell pepper, onion, garlic at the gravy time and add tomatoes fresh or canned to the last 4 hours. For heat I add cajun seasoning or red pepper flakes. Yall read and make your gravy per recipe and you cant go wrong. The gravy is the truth! Remember cutting too many corners will mess up this recipe.

Just followed your recipe and wow…this was my first time making oxtails. My wife’s loves them but I’ve never been a fan, but I tried them anyways. They came out perfect. I added 4 tablespoons of Walkerswood hot jerk seasoning and the taste was spectacular. Thanks!

Rosie girl let me tell you. You must have been in my head. I literally woke up this morning dreaming and telling myself over and over and over that I needed to make oxtails with gravy in the slow cooker. Mind you I’ve never in my entire life ever had oxtails. Nobody in my family has ever made them so I’ve no idea where that thought came from. Be that as it may, I got up, went looking for some oxtails, then sat online to find a recipe. Low and behold you pop up with the exact recipe for what I was craving. Thank you girl for answering that craving call. I can’t wait to sink my teeth into these oxtails after church for Sunday dinner.

In the process of making now and it looks amazing. This is my first time making oxtails and of course I messed up and sauteed the onions and garlic with some oregano before making gravy but it turned out ok and it smells wonderful. Thanks so much for this recipe!!

I would just braised without gravy for keto.
I made these a couple months ago for my husband because he really wanted some oxtails-I do not care for oxtails but wanted to make a good southern food dinner for him and I came across this recipe. I also had all the ingredients so it was time. I am NOT a good cook but I can cook enough to keep my family living-HA! The instructions were very simple but I did have an issue with the way the gravy came out and I can tell you it did NOT look like yours Rosie! Mine was more lighter in color and really thick, not sure if I cooked long enough or should have added more liquids. Even with my lack of cooking skills, even I knew something was up but I kept on with the recipe. I was hoping it would change after cooking but no it did not. I felt bad when I had to explain to my husband that I messed up his oxtails. He said he did not care and was going to eat them. He literally ate every bit of the oxtail with the exception of the bone!! I wish I took pictures but I dare not show Rosie what I did to her recipe…He loved them and I told him I would try again. So recipe 5 stars just not my cooking skills!!

Hello Rosie! I found your site a few years ago. I have always made the Jamaican oxtails, but decided I wanted a more soulful and southern flavored oxtail for Thanksgiving! I am soooo glad to have found your version! THESE WERE THE BEST SLOW COOKER OXTAILS I HAVE HAD IN A LONNNNNNG TIME! These were so flavorful..the right amount of ERRRTHANG! I froze some, and reheated them just today..THEY TASTED AS IF I HAD JUST MADE THEM! You go girl! You knocked this one outta the park! I made mashed potatoes to accompany the oxtail and Brussels sprouts with bacon , red onion, and balsamic vinegar. Thank you for posting such a deliciuos and easy recipe

I recently found you on Pinterest while looking for an Oxtail recipe. I am a southern soul food girl and have been cooking for over 40 yrs. This was my first experience making oxtails with gravy and this recipe did not disappoint. I followed the recipe exactly and had to laugh at the gravy……we southern girl love a good gravy made with pan drippings and crumbs-lol. I am wondering if you have a recipe for Oxtail Soup? My best girlfriend made it with a tomato and beef broth base and vegetables that reminded me almost like what my grandmother made called Camp Stew (we are from south Alabama). Any help with this would be great. I subscribed to your email and can’t wait to try you other recipes.

I love this recipe made this for Easter, they came out very well. I had to add more beef broth while making the gravy, but that’s not an issue for me. I noticed a little bit of meat and gravy was stuck to the sides of my crockpot. Next time I will spray non-stick cooking spray on the sides and bottom before adding the ingredients. I also just bought some pink Himalayan salt I may try this time around instead of kosher and I have some badia complete seasoning not sure but we shall see.

Rosie!!! One of our local soul food restaurants is always out of oxtails and only has them available on Friday’s and Saturday’s. Your recipe was the first one I saw with a video and it turned out sooo very tender and yummy! I was sceptical about cooking on high for 8 hours so I cooked on high for 6 and low for 2 (lol). Turned out great meat falling off the bone and the gravy to die for. We ate with brown rice and collard greens. My neighbor doesn’t cook but always buying ingredients for things she likes to eat (interesting partnership) I of course like to cook. Then we share with my parents and their best friend who all used to cook large Sunday dinners for us when we were small! Thanks again! Soo flavorful!

Miss Rosie thanks for this wonderful site.I can only find huge oxtails around here about a 1# each is that okay? I’m used to the smaller ones so you have a bunch these have a lot of meat but you won’t have the bones with marrow and cologen etc.What would you do.

I cooked this today and followed the recipe. It was delicious. I will definitely make this again.
I am WITHOUT SPEECH! I made this last weekend & I’ve already told my in-laws to make sure they continue to save me the tails when they butcher their cows! I’ve made tails for YEARS …however, NEVER like this! I’ve GROWN up on the veggie soup style & SOMETIMES other ways. My parents who were chefs showed me how to cook & the love WE put into it! YOU showed YOUR love for that cut of beef HONEY! My ONLY mistake was NOT adding MORE thicker onions! I also forgot about them…thus the meat fells off when I scooped some up. I am SO SORRY for the length of this but I’m in my..ahem late 50’s & eating something so delicious ONE way BLEW my mind! Something so simple & YET so filling! I HAD to make more onions as the ones melded away. My younger son, was leery of eating them (LOL), so when he saw JUST the meat he was okay. My older son said…”WHERE’S the bone?”, in the beef commercial voice. Not sure how long they ended up cooing but in between time, I skimmed off the fat & saving to made french fries! ANYWAY…I followed the recipe EXACTLY & LOVE how you don’t have to add a thing except MORE of something for PERSONAL tastes. I found that I only added extra onion & garlic as MY personal taste. It DID NOT NEED IT! BE clear about that. I am blessed to NOT have to buy the tails & when they first gave me the WHOLE tail…I was surprised at how big they are! What I’ve seen in the store does NOT even come close to what I’m able to get now. ANYWAY, on a very personal note…I dreamt of my mom that night & I think she’s glad I found another way to fix them. I guess It never occurred to do it until I had so much at hand until I looked for another way to fix them. Thank you for your great taste!

Really delightful oxtail!!! Extremely flavorful. Great with rice or mashed, also good with a little bit of Curry seasoning if you want island style.
