Hello Rosie. I stumbled across some of your recipes yesterdayon youtube by accident. I must say I have not been able to stop looking. My husband and I love to cook and eat and are always looking for new recipes. You are a heaven sent. Everything looks great. Im a truck driver so I havent had a chance to prepare anything yet, but I plan on it as soon as I am in town. Keep doing what you are doing. Thanks!!!!!

My husband loves oxtail – he ate it at a Caribbean restaurant back home in Kentucky – we’ve since moved to Arizona and the last time he visited Kentucky the place had closed down. Soooo I figured I’d try to make it for him. It’s almost done – can’t wait to see what he thinks. I’ve never had it – scared to try it myself so I’ll let him be the judge.
Cj says
Hi Rosie,
This looks so delicious!! I plan on making this for my oxtail loving friends. But I probably have to at least cook 6 or 7 pounds of oxtail. Should I just triple or quadruple the recipe? I really don’t want to screw this up for my friends. I am so looking forward to cooking this too….. I love lima beans too. Do you use both baby lima and regular lima? Btw, I am rating this recipe now, because I know I am going to love it!!!
Thank you in advance!
Rosie says
Yes, you will have to add more of all the ingredients. Any limas will do. Enjoy!
Shay says
Hey rosie can i use the slow cooker if so i long will i cook them for? And can i use the frozen bag of lima beans instead of regular ones? Please let me know when you get a chance.
Rosie says
Hi Shay! Yes, they can be cooked in the slow cooker. It would probably be 6 hours or so on low. Frozen limas will work fine.

I want to try this recipe but I don’t like lima beans or any other beans really . What can I use in stead? Or can I just omit the beans?
Rosie says
Leave the beans out if you don’t like them.

I’m actually making this now…I to randomly stumbled on your site,,happy I did,, question,, should I cover the pot the whole time?
Rosie says
Welcome to my blog! Yes, keep them covered while cooking 🙂

Thanks!
Sky
Rosie says
Yes. Drain first.
Nellie says
I searched the web for an oxtail recipe and discovered yours. It’s cooking now. So far it smells and looks great. I burnt my mouth tasting the juice but it was worth it. I have about another hour before I add the beans and tomatoes. I can’t wait to serve this to my husband and sons. Thanks for the delicious and simple recipe.

Making the oxtails, do I need to keep in the fridge for 4hrs? I started preparing late.
Rosie says
Yes. 4 hours minimum.
Tamesia says
Made these yesterday, My husband was born in Jamaica, and I love surprising him with new Jamaican dishes that I’ve learned to make. He said my oxtails were better than some restaurants he’s had here in the US. I would love to learn to prepare his favorite… ackee and salt fish. Do you have a recipe for that?
Rosie says
I would have to ask my mom for her recipe. 🙂
Tamesia says
Awesome! I shall be waiting
Reggie says
Can I use something else if I can’t find onion powder?thanks
Rosie says
You can omit the onion powder. However, onion powder is easy to find.

Kristina says
Hi,
I JUST got turned on to your site via Facebook. I have not tried your recipes yet, but watching you make them I can tell they are the real deal.
I am definitely making this one…a few questions…can we marinate overnight? Also, can I use lentils instead of lima beans (or maybe even pinto beans?).
I would love to see you take on some Latin American dishes as well! (besides enchiladas, fajitas and tacos, lol).
Rosie says
Thanks Kristina. I’ll see what I can do 😀
Denise says
What about marinating overnight?
Rosie says
You can do that 🙂
Lennie says
Hi, can I use another type of bean? I am trying this for the first time. Wish me luck
Rosie says
Sure , you can try a different bean.
Symone says
First I just say I loooove your website and I’m a subbie on YouTube and I’ve tried a ton of your recipes and have yet to find one I didn’t absolutely loooove!!! With that said, I’m not sure if it’s just me but is the recipe posted for the Jamaican oxtails? I see the video but I only see the video and some type of error code. Can you please post the recipe with measurements unless it’s just me and if that’s the case can you post it in the comments cuz I already brought the oxtails lol
Rosie says
Hi Symone! The recipe is now there. Sorry about that! XOXO
Tammy says
I love your website and YouTube channel thank you for sharing your recipes I’m 28 and thanks to you I can cook lol. I didn’t get taught how to cook growing up so I’m doing on my own learning as I go. On your Jamaican oak tails when you say quick soak the Lima beans what exactly do you mean how do I do this I live Lima beans
Rosie says
Hi Tammy. The quick soak method for the beans ( dry beans) should be on the back of the bag.
Sherrome says
Hi Rosie.. just finished this recipe of yours and my neighbors are waiting for a sample just off the aroma lol. They are my best tails yet! Thanks for this easy recipe. Wish my Rosie, my mom, was here to suck a few of these bones. I found my new recipe Muse
Rosie says
Glad that you like the recipe!
Ricki Sims says

What other beans do you suggest using instead of lima beans?
Brittney says
Hi! In the middle of making your recipe for the oxtails now! Quick question, if I don’t add beans to the oxtails do I still need to let them simmer for the extra hour?
Rosie says
Yes, you still need to cook them for the same amount of time 🙂
Jocelyn M says

Im hispanic and my husband is trini but we love this! Delicious!
Rosie says
Thanks for trying my recipe! 😀
Amber says
I’m making this with 6lbs. of oxtails, do I triple absolutely everything? I measured out all of the spices x 3, and it looks like a whole lot. I used about half of it to coat the oxtails, and it looks like more than enough. Should I use the rest of the spices anyway? I really want them to turn out great.
Rosie says
If you’re tripling the recipe, you will have to triple everything.
Raquel says
I love the flavor of Jamaican oxtails and the idea of adding Lima beans directly to the pot. I was wondering is there a way to make this recipe in a crock pot?
Rosie says
Yes! You can make it in a slow cooker. 🙂

A friend shared this recipe on Facebook. So I glad I found it. It is an amazing recipe. Simple and easy to make yet so flavorful and yummy! I have already made it 3 times in short amount of time. It even worked with lamb, although it is an ultimate oxtail recipe! So thank you!
Rosie says

Hi Rosie,
I am making this awesome recipe today! I was wondering if the 4 hr marinating step can be skipped since I am using the slow cooker for 6 hrs on low as you suggest? Thank You!
Rosie says
For best results, stick to whats listed 🙂
Tina says
I’ve made these SO many times since I first discovered your recipe. I wanted to cut down on the cooking time this weekend, so I did them in the InstantPot on high pressure for 45 minutes. I did NOT sear them–and was so worried I’d gone wrong with that. Natural pressure release for 10 mins, then manual release. They turned out just as if I’d made them on the stovetop–SO delicious!! I can’t thank you enough for sharing this recipe!!
Rosie says
Glad that you liked the recipe Tina!
Vanessa D. Speights says

Me and my hubby are from NY, but moved to TN 4 years ago. Haven’t had real oxtails since before then. I made yours and it made me homesick. My hubby loves them too. I’m sure I’d be able to find a restaurant down here that makes them but nothing else I found down here tastes authentic to me so I didn’t want to take a chance. These oxtails are deeelicious. I will be making them again! Thank you.
Segrid says
I have been using this easy delicious recipe for years!! Finally read your bio on Rosie, thank you so much for this! It’s been an absolute favorite for my family and they prefer mine over the restaurant!!!❤️
