In my opinion, it’s entirely up to you. If you have frozen broccoli on hand, go ahead and use it! Same with fresh broccoli. Fresh vegetables contain less water, so there will be less risk of a soggy casserole. On the other hand, frozen veg can be just as healthy as fresh, sometimes even more so! Frozen vegetables are usually frozen at the peak of their freshness. They also have a longer shelf life. So it’s time to use that icy bag of broccoli you stuffed into the back of your freezers, Cousins!
Should I thaw frozen broccoli before tossing it into my casserole?
Frozen broccoli has already been parboiled, so it does not need to be thawed. However, if there’s any frost or ice on the florets, you’ll want to remove that by running the broccoli under water and then drying it off with a paper towel.
How to Make Easy Broccoli Casserole (without Canned Soup!)
So, after reading all those ingredients, your mouth is probably watering, right? Well, how about I tell you how to make this easy casserole? You’ll need a casserole dish, a large mixing bowl, and a small saucepan to whip this up. Then we’re ready to rock.
- First, combine the shredded cheddar cheese, eggs, and mayo in a large bowl and mix until creamy and combined.
- Next, toss in your broccoli and garlic and stir everything together.
- In a medium saucepan, melt some salted butter over medium heat. Toss your diced onion into the melted butter and sauté until translucent. (Isn’t the smell of melted butter and onions intoxicating?! Admit it– it is!)
- Sprinkle in the flour and half and half. Cook for about five minutes or until it begins to thicken, then take the onion mixture off the heat.
- Pour the onion mixture and the seasonings into the creamy broccoli mixture.

Ingredients
- 1 cup mayonnaise
- 1 1/2 cups shredded sharp cheddar cheese

- 20 oz bag of frozen broccoli
- 1 small onion diced
- 1 1/2 tbsp salted butter
- 1 1/2 tbsp all purpose flour
- 2 1/2 cups half & half
Ritz Topping:
- 1 roll of Ritz crackers crushed
- 2 tbsp salted butter cubed
Instructions
- Preheat the oven to 350 F.
- Combine the eggs, mayo, salt, pepper, and cheese in a large mixing bowl, and mix.1 cup mayonnaise, 1 1/2 cups shredded sharp cheddar cheese, 2 large eggs, 1 tsp salt, 1 tsp ground black pepper
- Next, add in the broccoli and garlic, mix, then set the bowl to the side.2 tsp minced garlic, 20 oz bag of frozen broccoli
- In a medium-sized saucepan, melt butter over medium heat.1 1/2 tbsp salted butter
- Now add in the onions and saute until the onions are translucent.1 small onion
- Add in the all purpose flour, and stir.1 1/2 tbsp all purpose flour
- Pour the half & half into the saucepan and cook for 5 minutes or until it thickens.2 1/2 cups half & half
- Next, add the thickened sauce into the mixing bowl with the other ingredients and fold to combine.
- Lightly butter a medium-sized casserole dish, then pour in the casserole mixture.
- Dice the remaining butter into small pieces.2 tbsp salted butter
- Top the casserole off with the crushed crackers, then top with the diced butter.1 roll of Ritz crackers
- Bake uncovered for 30 minutes or until golden brown.
