Air Fryer Roast Potatoes, Onions, and Squash

A combination of potatoes, butternut squash, and fresh herbs. This air fryer recipe makes the perfect Thanksgiving and fall side dish.

Hey cousins! It’s officially Fall ( in my mind) so, I’m back with a fall inspired recipe. I’m going to show you how to make Roast Potatoes, Onions, and Squash in the air fryer. This recipe is pretty straightforward, and all basic ingredients are used. Let’s get right to it!

A delicious mix of potatoes, squash, and onions, perfectly seasoned with fresh herbs and fried to perfection in an air fryer.

Ingredients needed for this fall vegetable recipe

For this recipe I use a combination of potatoes, butternut squash, onions, and fresh herbs. I will list the recipe here, but feel free to scroll to the bottom, if you’d like to print the recipe card.

Ingredients needed

2 large russet potatoes, cut into 1/2″ pieces

2 cups sweet potato, cut into 1/2″ pieces

1 cup butternut squash, cut into 1/2″ pieces

1 medium red onion, chopped

1/4 cup olive oil

2 tsp fresh thyme

1 tsp fresh rosemary, chopped

2 tsp seasoning salt

1 tsp coarse black pepper

Serve up this Fall vegetable medley with potatoes, squash, sweet potatoes, onions, and fresh herbs, crisped to perfection in an air fryer.

Easy instructions on how to make this dish:

Combine olive oil, thyme, rosemary, seasoning salt, and pepper in a small bowl and set aside.

In a large bowl, add all chopped vegetables and add the olive oil mixture. 

Toss well until all veggies are coated. 

Spread vegetables in an even layer in your air fryer. 

Air fry at 400 degrees F for 10 to 15 minutes or until tender and roasted.

Serve and enjoy!
