Hey cousins! This is the time of the year that I love to invite my girls over to have brunch, and sip on mimosas. I usually like to have some type of breakfast or brunch casserole made as a main course. In this post I’m going to share a recipe for delicious chocolate strawberry French toast casserole. This recipe is always a winner! It pairs well with crispy bacon, fluffy eggs and fresh fruit. When I make it, there is never any leftovers, and it’s usually gone within minutes. Y’all definitely have to give this one a try! Let me tell you how it’s made.
How to Make Chocolate Strawberry French Toast Casserole
Ingredients
6 cups cubed chocolate Brioche Bread
6 large eggs, room temp
1 cup French Vanilla coffee creamer
1 cup heavy cream
2 tsp vanilla extract
1 ½ tsp ground cinnamon
½ tsp ground nutmeg
2/3 cup brown sugar
1 cup strawberries, diced and stem removed
1-2 tbsp powdered sugar

- Baking Spatula
- 9×13 casserole or bake dish
- Large mixing bowls
- Whisk
- Measuring cups
- Measuring spoons
- Baking sheet
- Plastic wrap
What if I can’t find chocolate brioche bread?
If you can’t find chocolate brioche bread, simply buy regular brioche bread, and add 1 cup of mini chocolate chips to 6 cups of cubed brioche.
Instructions

- Place the bread cubes on a parchment covered baking sheet, and let sit out overnight so the bread can dry out.
- Grab a large mixing bowl, and add in the eggs, milk, French vanilla creamer, vanilla extract, nutmeg, cinnamon and brown sugar.Â
- Whisk everything until it’s well combined, then set the bowl to the side.
- Slice strawberries, and set to the side.Â
- In a large bowl, add the chocolate bread chunks, strawberries and egg mixture.Â
- Fold the ingredients until well combined.
- Cover the mixing bowl with plastic wrap, and refrigerate for 1-2 hours.
- Preheat the oven to 350 F.
- Spray a 9 x13 baking dish with non-stick baking spray, then set to the side.Â
- Add the french toast mixture into the 9 x 13 dish, and smooth out the mixture into an even layer.Â
- Leave uncovered, and bake for 35-40 minutes.
- Check at the 35-minute mark, and if it is not done, bake for longer.Â
- Remove from the oven, and let it cool for 10 minutes.Â
- Sprinkle the top of french toast casserole with powdered sugar.
- Serve with maple syrup and fresh fruit!
