Delicious lightly seasoned, cooked-to-perfection filet mignon with herb butter mushrooms.
Hey cousins! My family and I recently dined at an upscale steakhouse that was to die for. The restaurant had an amazing view, comfortable seats and quite an impressive menu. I haven’t had steak in a while, so I decided to order filet mignon with creamed spinach and a loaded baked potato. I topped supper with dessert which was a slice of New York cheesecake. I guess you could say that dinner was fantastic! That was until the waiter brought over our bill. So, three steak dinners, two beverages and two desserts later, our bill was just a few dollars shy of $300. Say what?! Y’all know I’m not the cheapest person in the world, but I darn sure won’t make it a habit to spend that much money on a few steak dinners, especially when I can make it at home for a fraction of the price.
The following week we wanted steak again; however, this time, I refused to pay that much for a few steaks. Instead, I headed to my local grocery store and purchased a few steaks and made them myself. There was no surprise when my husband and son cleaned their plates. I mean, come on y’all, the dinner was made by ME! Of course they loved it! The only surprise was how little effort I had to put into the steaks. Let me tell y’all how I made the filet mignon with herb butter mushrooms.
How to Make Filet Mignon with Herb Butter Mushrooms
Ingredients
Filet Mignon
2 filets, about 2-1/2 inches thick
2 cups sliced mushrooms
4 tablespoons salted butter
2 tbsp olive oil
2 tsp kosher sea salt
½ tsp coarse black pepper
Herb butter
½ stick of butter
½ tbsp of fresh rosemary
½ tbsp fresh thyme
¼ tsp. Garlic powder or minced garlic
Instructions
- Soften the butter in the microwave just a little. Stir in herbs and garlic until fully mixed.
- Add 2 tablespoons of plain butter and a drizzle of olive oil to a cast iron skillet on medium-low heat. Add mushrooms once butter is melted and sprinkle with garlic powder and salt. Cook for about 5 mins, stirring occasionally, or until tender. Set aside.
- Preheat the oven to 415° F.
- Season both sides generously with salt and pepper.
- Add the olive oil and plain butter to your cast iron skillet and turn up to med-high heat.
- Place the filets face down and sear for 2 minutes.
- Flip the filets and sear for an additional 2 minutes. (This will give your filets a nice seared edge.)
- Transfer your skillet directly to the oven. For rare, bake for 4-5 minutes. Medium rare, 5-6 minutes. Medium, 6-7 minutes. If your filets are thinner, cook time may be shorter.
- Remove filets from the skillet and set on a plate. Lightly cover with tin foil and let sit for 5 minutes before serving.
- Top with mushrooms and a dollop of herb butter and serve.

Cooking
Remove steak from the fridge 1 hour before cooking, this is to bring the steak to room temperature and ensure your cooking times are more accurate.
How store leftovers
I store my leftover steak wrapped in foil. When I’m ready to reheat, I simply place the foil wrapped steak on a baking sheet, and place it in a preheated oven on 350 F. I then let it heat up for 10 minutes.
