Hey cousins! I’m back with another Thanksgiving-inspired recipe. Since so many of you seem to have a taste for pumpkin this year, I’m going to share a recipe for the Best Ever Pumpkin Pie Bars. These bars have the most delicious pumpkin pie filling. It’s full of amazing spices, and it makes the perfect holiday dessert. How to Make the Best Ever Pumpkin Pie Bars
Ingredients
- flour
- old fashioned rolled oats
- baking soda
- sugar
- packed brown sugar
- salted butter
- sugar
- ground cinnamon
- ground nutmeg
- ground ginger
- ground cloves
- salt
- eggs
- vanilla extract
- pumpkin puree
- evaporated milk
Instructions
Crust:
- Line a 9×13 baking dish with parchment paper, and preheat the oven to 350 F.
- In a large mixing bowl, whisk together the flour, oats, salt, and baking soda.
- Add 1/2 cup sugar and 1/2 cup brown sugar with the other dry ingredients.
- Next, pour the melted butter into the dry ingredients, and stir until well incorporated.
- Press half of the oat mixture into the baking dish, and bake in the oven for 15 minutes.
- Once baked, allow to cool completely.
Filling:
- In a large bowl, combine 1/2 cup sugar and 1/2 cup brown sugar, cinnamon, nutmeg, ginger, cloves, and salt.
- Add in the eggs and vanilla. Mix until well combined.
- Next, mix in the pumpkin puree and evaporated milk until well combined.
- Pour the pumpkin mixture onto the cooled crust.
- Now sprinkle the remaining oat mixture on top of the pumpkin pie mixture.
- Bake in the oven for 25 minutes or until the crust is golden and the center jiggles slightly
- Let cool completely.
- Serve and enjoy with whipped cream!
