Then they’re drenched in butter, rolled in a cinnamon sugar mixture, and finished off with a drizzle of caramel sauce. How insanely indulgent does this sound?! Can I use pie dough or corn tortillas instead of flour tortillas?
Another variation of these caramel apple pie taquitos I’ve seen is using pie dough instead of a tortilla. I think this is a great idea and makes it even more like an actual pie! I’d recommend rolling the pie dough to the same thickness as a tortilla to get the same results. FYI – using corn tortillas wouldn’t be my first choice. They won’t crisp up like flour tortillas do and are much more likely to fall apart while rolling.

Okay, friends, we’ve reached the good part: how to make these delicious apple pie taquitos! They are the perfect last-minute dessert, something to satisfy your sweet tooth, and the perfect nod to one of the most classic desserts there is. Here’s how it’s done!
- Make the apple pie filling. Peel and chop the apples into small pieces, then toss them into a pan along with the apple juice, brown sugar, spices, and a little cornstarch to thicken the mixture. Simmer over medium heat for 10-15 minutes, stirring regularly. When it’s done, remove the pan from the heat and let it cool.

- 1 tsp cinnamon

- 1 tbsp cornstarch
- ¼ cup apple juice

- 8-10 small flour tortillas
- 2 tbsp melted butter
- ¼ cup brown sugar
- ¼ cup granulated sugar
