An Easy, Semi-homemade Lemon Loaf Pound Cake Recipe!

I love Starbucks Lemon Loaf recipe, but I actually have a recipe that is even better! This lemon loaf pound cake is so amazing, it gives Starbucks a run for their money!

Making this easy lemon loaf if extremely simple because we cheat by using lemon cake mix! That’s right. No making anything from scratch, you can skip the headache. The only thing we’re making from scratch for this lemon loaf pound cake will be the icing.

A golden lemon loaf pound cake with a drizzle of sweet icing and a garnish of lemon zest.

The icing that we drizzle on this lemon loaf pound cake is the bomb! It’s made with fresh lemon juice as well as sugar and lemon zest.

Moist lemon pound cake drizzled with sweet icing and tart lemon zest.

I DO NOT use store-bought lemon juice for this moist and delicious lemon loaf recipe. I use  fresh lemons. It tastes so much better than the store-bought stuff!

Lemon Loaf Pound Cake

Lemon Loaf Pound Cake

This semi-homemade lemon pound cake is better than any store-bought lemon loaf. This is a sweet treat that pairs perfectly with a cup of coffee in the morning!

Ingredients

  • 1 Box Lemon Cake Mix
  • 3.4 oz package of instant lemon pudding
  • 4 large eggs
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 tbsp. lemon zest
  • Glaze
  • 2 Cups Powdered Sugar
  • 3-4 tbsp. FRESH lemon juice
  • 1/2 tsp lemon zest

Instructions

  • Preheat the oven to 350 F.
  • Prepare a loaf pan with a non-stick spray, shortening or butter and a dusting of flour.
  • In a large bowl, mix together the cake mix, instant pudding, eggs, water, oil and lemon zest until well combined.
  • Bake for 50 minutes or until toothpick comes out clean.
  • Remove from pan and cool completely on a wire rack.
  • Prepare the Lemon Glaze while waiting for the bread to cool.
  • If you want a thicker glaze, use the 3 tbsp of FRESH lemon juice (don’t use the store bought lemon juice), add more lemon juice if you want a thinner consistency.
  • Drizzle over the bread.
  • Serve and enjoy!

    I loved your Lemon Loaf Pound cake. But for the Lemon taste I added 2 Tbsp. Lemon juice from a Meyers lemon and the zest was from a Meyers lemon. It was so delicious and lemony. Really loved it. Your recipes are always so delicious. I really love your Recipe blog and the amazing and different recipes. Please keep them coming!!!

    Oh My Goodness! This is the THIRD time I have made this cake in eight days…first for my nine year old grandson who loves the Starbuck’s Lemon Pound Cake, second for a church function, and tonight for my husband. People, this cake is Beyond LUSCIOUS ! It is SPECTACULARI added two teaspoons off lemon extract and I poured it into a bundt cake pan instead of two loaf pans. Bake until tester comes out clean. Cool as instructed and then glaze. It is gorgeous! I had 17 recipe requests the night of the church function. My ultra picky grandson tells everyone this cake is The BOMB. I cannot thank you enough for sharing this recipe with us⭐️⭐️⭐️⭐️
