Creamy pasta with juicy chicken and tomatoes!
Valentines Day is coming and everyone will be spending top dollars on entrees that they can make at home. I personally don’t believe in spending money on something that I can make myself. Years ago, before I started getting creative, my hubby and I use to spend over $60 dollars at the Olive Garden for a simple dinner. Now I know there’s a lot of ballers out there, and $60 is chump change to you, but I’m a mother and wife with bills so I’d rather spend my $60 dollars on something else, other than  plate of food.
I came up with this super easy Chicken Alfredo Spaghetti recipe a few weeks back. I was going thru my cabinets, and noticed that I had a lot of spaghetti pasta ( like always), and I also had a few jars of alfredo sauce that I got from $1 each at Target. Â With Valentines Day coming up, I figured that I should share a chicken alfredo recipe with you all. No need to spend up all your money eating out, and paying for a babysitter. You can make your very own Valentines Day dinner at home!
Usually when you hear chicken alfredo, you associate it with fettucini pasta. You can definitely use whatever pasta you want for this dish. I just love spaghetti, and like I mentioned before, I always have it on hand. This dish is a combination of the traditional spaghetti, and chicken alfredo . I used tomatoes to add a pop of color, and a sweet zesty taste.
The chicken used for this recipe was boneles skinless chicken breast. However, you can use skinless boneless chicken thigh if you aren’t a fan of white meat.

Chicken Alfredo Spaghetti
Ingredients
- 1 lb boneless skinless chicken breast
- 16 ounces of spaghetti
- two 15 oz jars of alfredo sauce
- 13 ounce canned tomatoes drained
- 1 tsp original Mrs. Dash Seasoning
- 1 tsp southwest seasoning or 1/2 tsp of salt and 1/2 tsp chili powder
- 2 tsp seasoning salt
- 1 tbsp garlic powder
- 1 tsp ground black pepper
- 3 tbsp olive oil
- 1/2 cup sharp cheddar cheese
- 1 cup Italian blend cheese
- 1/2 cup green onions chopped
Instructions
- Preheat the oven on 375 F.
- Drizzle 1 tbsp of olive oil on the chicken, and season each side of the chicken with the Mrs. Dash, and the southwest seasoning.
- Cover and bake the chicken for 30 minutes.
- Boil your pasta then drain.
- Place the pasta into a bake dish, then drizzle 2 tbsp of olive oil over the pasta.
- Cut the chicken into bite sizes, then add the chicken to the pasta, along with the tomatoes.
- Pour 1 1/2 jars of the alfredo sauce over the pasta, then fold in.
- Season the pasta with the garlic powder, seasoning salt, and black pepper.
- Sprinkle in 1/2 cup of the cheddar cheese and 1/4 cup of the green onions over the pasta, then use tongs or another kitchen utensil to fold everything in.
- Sprinkle the Italian cheese over the pasta.
- Bake in the oven for 25 minutes on 375 F.
- Heat the remaining alfredo sauce, and keep it in case anyone wants extra sauce.
- Serve!

Thank you so much for sharing. I had a chouce if spaghetti noodles or elbows and ended up using elbows and whew it cane out great! I had to substitute a few things like using diced tomatoes and Italian 3 cheese but it came out great! I rarely cook or write comments for that matter but I just wanted to sincerely thank you and recommend this recipe!
