7 Day Vegetable Soup Diet from I Heart Recipes

Hey loves! As many of you have requested, I am back with another weight loss / diet recipe. This time around we will be making the famous vegetable soup diet! This diet recipe is just like the cabbage soup detox diet. However, we use different ingredients. This 7 day soup diet recipe is packed with broccoli, cauliflower, yummy bell green peppers, sweet red bell peppers, onions, carrots, and more!

Since this is a vegetable soup, I like to use low sodium broth ( although regular vegetable broth will work as well!). You can indeed use chicken broth if you’d prefer.

Again, this 7 day weight loss soup diet is just like the cabbage soup diet. The soup its self is like a low glycemic diet. It’s low in sugar & carbs.

Keep in mind that this soup diet is not meant to last longer than 7 days.

Vegetable Soup Diet Recipe

Low glycemic, vegetable soup diet. Soup made with broccoli, cauliflower, peppers, carrots, and more. Follow for rapid weight loss.

Servings: 8 servings
Ingredients
  • 8 cups low sodium vegetable broth
  • 3 cups broccoli florets
  • 2 cups cauliflower florets
  • 2 medium zucchini sliced
  • 1 large red onion diced
  • 2 14.5 oz canned diced tomatoes, in juice
  • 4 cloves garlic minced
  • 2 large carrots peeled & diced
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 3 tbsp tomato paste
  • 2 bay leaves fresh or dry
  • 2 tsp Italian seasoning
Instructions
  1. In a large pot drizzle in the olive oil, and turn the heat to medium
  2. Once the oil is nice & hot, add in the onions and cook for 2 minutes.
  3. Add in the garlic, and cook for about 1 more minute.
  4. Add in the carrots, and bell peppers. Stir and cook for 3 minutes.
  5. Now add in the tomato paste, and pour in the tomatoes with juice, and broth.
  6. Stir the ingredients, then add in the bay leaves and seasonings.
  7. Simmer for 8 - 10 minutes.
  8. Toss in the broccoli , cauliflower, and zucchini.
  9. Simmer until tender.
  10. Fish out the bay leaves.
  11. Serve & enjoy!

    Rosie have you tried this vegetable soup diet? Can you let us know how it works for you and what you think about it before we start it ourselves?

      Hi Shelby! I did. I tried it for a couple days, as a detox, along with fresh juice. The weight loss is mainly water, but it’s a great kick starter.

    Hi Rosie
    I’m so happy to have stumbled across your web page. Since I am diabetic I have definitely loss a lot of weight (over 50 lbs). This soup diet sounds like my cup of tea. I love all kinds of vegetables raw or cooked. However I definitely don’t need to lose any more weight or I’m goona need some bricks in my pockets to keep from being blown down the street. Do you have any recipes for diabetics that will help me and my Sons stay on the straight & narrow? Thanking you in advance

    Hi Rosie! I am trying your recipe right now. I wanted to know for the duration of the 7 days, how many times a day do you eat the soup and is the soup the only thing you eat for those days! Thanks!

    I made your Cabbage Soup yesterday, let it stand overnight for all the flavors to marinate, and it was GREAT!!!!!
