Hi friends! As y’all know, I live in the Pacific Northwest, and around here, it’s pretty much always soup season. There’s nothing better than a large bowl of warm, hearty, filling soup. And that’s exactly what I am sharing with you today – a recipe for the ULTIMATE comfort chicken soup!
This chicken and corn soup recipe has tender chicken, carrots, peppers, and potatoes, along with sweet corn cobs. It’s warm, comforting, flavorful, and filling!
Chicken and Corn Soup for the Soul
Chicken soup is known for comfort. When you’re feeling under the weather and need to warm up, there’s nothing better than a bowl of soup, especially on a cold day. Chicken and corn soup is just that. How is this different from chicken noodle soup? Well, that classic soup is made with a mirepoix – carrots, onions, and celery – and egg noodles.
This chicken and corn soup recipe is noodle-free (also making it a great gluten-free soup!). For veg, we still use onion and carrot, but swap out celery for a sweet bell pepper. A few other ingredients give this recipe a heartier broth, making it a perfect alternative to regular ol’ chicken noodle. Ready to dive into this recipe? Let’s do it, fam!

You need some basic ingredients for this easy soup. The good news is that you can adjust the ingredients based on your taste and what you have on hand, but of course, y’all know I always say to follow the recipe for the best results! - Chicken: I use boneless, skinless chicken thighs because they’re usually cheap or on sale, and always nice and tender.
- Vegetables: I use bell pepper, green onions and white onion, carrots, red potatoes, and small (or half) corn cobs. And of course, can’t forget minced garlic!
- Canned Diced Tomatoes: a can of diced tomatoes helps flavor the soup and add a little bit of acidity.
- Seasonings: I use a salt-free all-purpose seasoning (my go-to is always Mrs. Dash Original Blend) and a simple seasoning salt.
- Water: the broth for this soup is made with 8 cups of water.
Ingredient Notes and Swaps
I told y’all this was a recipe with simple ingredients and a lot of wiggle room! Here are some alternative ingredients that you can use to make this delicious soup.
- Instead of chicken thighs, you can use chicken breasts if you prefer. You could also use rotisserie chicken or any leftover chicken you have on hand.
- If you want to stay true to the heart of the recipe, the easiest veggies to tweak are potatoes and corn. Instead of red potatoes, you can use Yukon gold potatoes. If you don’t have or don’t like corn on the cob, you can use canned whole kernel corn or even frozen corn.
- Want to add more vegetables? Peas, broccoli, green beans, or even zucchini are great options.
- I tend to stick with simple seasonings in this recipe. If you don’t have seasoning salt, stick to good ol’ salt and black pepper. You can also switch up what kind of all-purpose seasoning you use. Try a garlic and herb blend, a poultry seasoning blend, or a classic Italian seasoning blend.
- Instead of water, feel free to use chicken broth or vegetable broth as the base for your soup. You could also use chicken bouillon cubes to create a homemade chicken broth.

- While the soup begins to heat, prep and season the chicken. Toss the chicken into the pot and cook for 10 minutes over high heat.
- Reduce the temp to medium-high heat, then add the tomatoes, corn, and potatoes.
- Cover and let the soup cook for 20-25 minutes, or until the potatoes are tender and the chicken is cooked through.

- You could absolutely add egg noodles (or your favorite soup noodles) to make this a heartier chicken noodle soup.
- Make it a spicy chicken corn soup by adding sliced jalapeno peppers or garnishing your soup with sriracha or hot sauce.
Can I make chicken and corn soup in the Instant Pot or slow cooker?
Yes, you can! To make Instant Pot chicken and corn soup, prepare everything as directed in your Instant Pot bowl. Pressure cook the soup on high for 8-10 minutes, then quick-release. For the slow cooker, add all the ingredients to your slow cooker pot. You’ll want to add a little less liquid, since the chicken and veggies will release water as they cook. (If you need more broth, you can add it once the soup is done.) Slow cook on HIGH for 3-4 hours or on LOW for 6-8 hours.
How can I thicken my soup without making it creamy?
A simple cornstarch slurry (cornstarch mixed with a bit of cold water) will do the trick. Stir it into the hot soup and allow it to simmer until it thickens to your liking.
Can I sauté the vegetables in my chicken corn soup?
Yes, you can! It will add a nice flavor to the soup. Sauté the veggies in butter or olive oil until they’re aromatic and begin to soften, then add the rest of your ingredients. It’s an added step, but the flavor is worth it!

- 2 lbs boneless chicken thighs

- 1 large bell pepper chopped
- 1 large onion chopped
- 3 large carrots peeled and chopped

- 2 tbsp seasoning salt
- 2 tbsp all-purpose, salt-free seasoning
- 6 medium size red potatoes chopped
- 8 small corn on the cobbs
- 8 cups water or broth
Instructions
- Add the onions, peppers, and carrots in a pot. Sprinkle in the seasoning salt and garlic, then pour in the water and bring to a boil over high heat.1 large bell pepper, 1 large onion, 3 large carrots, 5 green onions, 2 tbsp seasoning salt, 8 cups water or broth, 1 tbsp minced garlic
