Chop the brisket into small pieces.
1.5-2 cups Chopped brisket
Chop up peppers, cilantro, green and yellow onions into small pieces.
1/4 cup fresh cilantro, 1 sweet red bell pepper, 1/2 cup green onions, 1 whole yellow onion
Add southwest seasoning, veggies, and brisket to a bowl and mix.
2 tsp Southwest Seasoning
Add a few tbsp of vegetable oil to a large pan over medium heat. Cook the brisket and vegetable mix for about five minutes until the veggies are tender.
2 tbsp olive oil or vegetable oil
Place tortilla chips spread out on a cookie sheet.
1 bag tortilla chips
Top tortilla chips with brisket and vegetables mixture. Sprinkle sharm cheddar cheese on top.
2 cups shredded sharp cheddar cheese
Place nachos in the oven (set to broil) until the cheese starts to bubble, about 5-10 minutes.
