Ingredients

  • 1 cup mixed berries blueberries, blackberries, raspberries
  • 1 cup boiling water
  • 1 cup tequila preferably a silver or blanco for a smooth taste
  • ½ cup fresh lime juice
  • 2 envelopes of unflavored gelatin
  • ½ cup granulated sugar
  • Coarse salt for rimming the cups
  • Mini cups for serving

Instructions

  • Rim the mini cups with lime juice and dip in coarse salt. Arrange them on a tray.
  • In a saucepan, combine the boiling water and sugar, stirring until the sugar dissolves. Sprinkle the gelatin over the liquid and stir until fully dissolved.
  • Remove from heat and let it cool for a few minutes. Then add the tequila and lime juice, stirring well.
  • Add the mixed berries into the mixture and stir gently.
  • Pour the mixture into the salt-rimmed cups, taking care not to disturb the salt.
  • Refrigerate for at least 4 hours, or until the jello shots are firm.
  • Once set, you can garnish with a few extra berries or a small lime wedge if desired.
