  • In a large mixing bowl, stir together the corn, flour, sugar, baking powder, salt, pepper and cayenne.
    3 cups frozen corn, 1 cup all-purpose flour, 1/4 cup granulated sugar, 1 teaspoon baking powder, 1/4 teaspoon cayenne pepper, 1/4 teaspoon salt, 1/4 teaspoon ground pepper
  • Add the eggs and heavy whipping cream and stir until well incorporated.
    2 large eggs, 3/4 cup heavy whipping cream
  • Fill the bottom of a large skillet with oil and heat over medium-high heat.
    Vegetable or canola oil for frying
  • With a large spoon or an ice cream scoop, drop4-5 scoops of corn fritter batter into the hot oil and fry for 2-3 minutes.
  • Flip each fritter over and fry for an additional 2-3 minutes or until golden brown.
  • Drain the fritters on a plate or pan lined with paper towels.
  • Serve warm with sour cream and chopped scallions
