  • 2 large russet potatoes cut into 1/2" pieces
  • 2 cups sweet potato cut into 1/2" pieces
  • 1 cup butternut squash cut into 1/2" pieces
  • 1 medium red onion chopped
  • 1/4 cup olive oil
  • 2 tsp fresh thyme
  • 1 tsp fresh rosemary chopped
  • 2 tsp seasoning salt
  • 1 tsp coarse black pepper


  • Combine olive oil, thyme, rosemary, seasoning salt, and pepper in a small bowl and set aside.
  • In a large bowl, add all chopped vegetables and add the olive oil mixture.
  • Toss well until all veggies are coated.
  • Spread vegetables in an even layer in your air fryer.
  • Air fry at 400 degrees F for 10 to 15 minutes or until tender and roasted.
  • Serve and enjoy!
