Pumpkin Pie Bars

These pumpkin pie bars are perfect for Thanksgiving! Complete with a pie crust base, spiced pumpkin pie filling, and a crunchy oat crumble topping, this sweet treat has all the flavors of fall.

  • Line a 9x13 baking dish with parchment paper, and Preheat the oven to 350 F.
  • In a large mixing bowl, whisk together the flour, oats, salt and baking soda.
  • Add in 1/2 cup sugar, and 1/2 cup brown sugar in with the other dry ingredients.
  • Next pour in the melted butter into the dry ingredients, and stir until well incorporated.
  • Press half of the oat mixture into the baking dish, and bake in the oven for 15 minutes.
  • Once baked, allow to cool completely.
  • In a large bowl combine 1/2 cup sugar and 1/2 cup brown sugar, cinnamon, nutmeg, ginger, cloves, and salt.
  • Add in the eggs, and vanilla. Mix until well combined.
  • Next, mix in the pumpkin puree, and evaporated milk until well combined.
  • Pour pumpkin mixture onto cooled crust.
  • Now sprinkle remaining oat mixture on top of the pumpkin pie mixture.
  • Bake in the oven for 25 minutes or until the crust is golden and the center jiggles slightly
  • Let cool completely.
