These Southern collard greens are slow-cooked with bacon, onion, garlic, jalapeño, and a savory seasoned broth until tender and full of flavor. This classic soul food side dish is perfect for Sunday dinner, Thanksgiving, Christmas, and family gatherings.
Add the chopped bacon ends to a large pot and cook over medium heat until browned.
Add the diced onion to the pot with the bacon. Stir and cook until the onion begins to soften and sweat.
Stir in the minced garlic and cook for 1 minute.
Pour in the chicken broth and increase the heat to high. Bring the broth to a boil, then let it boil for 20 minutes.
Pour in 2 cups of water and reduce the heat to medium.
Gradually add the cleaned and cut collard greens to the pot. Allow the greens to wilt down as you add them until all 4 pounds are in the pot.
Sprinkle in the seasoning salt and ground black pepper. Add the sliced jalapeño and 2 tablespoons of white distilled vinegar, then stir everything together. Add the remaining tablespoon of vinegar later, if desired, after tasting.
Cover the pot and simmer over medium heat for 1 hour and 10 minutes, stirring occasionally as the greens cook.
Once the collard greens are tender, taste and adjust the seasoning or vinegar as needed. Serve hot with plenty of that flavorful pot liquor.
