Ingredients

  • For the Smoothie:
  • 1 cup frozen pineapple
  • 3/4 cup strawberries
  • 2 tablespoons flax meal
  • 2 tablespoons almond butter
  • 2 tablespoons hemp hearts
  • 1/2 cup almond milk
  • 4 ice cubes
  • Water as needed
  • For the Coconut Whip:
  • 1 can full-fat coconut milk chilled overnight in the refrigerator (upside down)
  • 1 teaspoon vanilla extract
  • Stevia optional, to taste

Instructions

  • In a powerful blender, combine the strawberries, flax meal, almond butter, hemp hearts, and almond milk. Add the frozen pineapple and ice cubes to the mixture.
  • Blend the ingredients until they achieve a smooth and creamy consistency. If necessary, use a tamper to press down the ingredients or add a bit of water to achieve the desired thickness.
  • Carefully open the chilled can of coconut milk, ensuring not to shake it. Drain off the water from the top. Scoop out the thick coconut milk into a bowl. Add vanilla extract. If you prefer a sweeter taste, you can add stevia at this stage.
  • Using an electric mixer, whip the coconut milk until it becomes fluffy and resembles whipped cream.
  • Pour the smoothie into glasses, making enough for two servings. Top each serving with a generous dollop of the homemade coconut whip. Enjoy the refreshing and healthy treat!

Notes

The recipe yields extra coconut whip, which can be stored in the refrigerator for future use. Adjust the sweetness of both the smoothie and coconut whip according to your preference.
