Ingredients

  • 1 pound of large shrimp peeled and deveined
  • 2 tablespoons of olive oil
  • 4 cloves of garlic minced
  • 1 cup of chicken broth or white wine
  • The juice of one small lemon or lime
  • 1 teaspoon of red pepper flakes optional
  • Salt and pepper to taste
  • 3 tablespoons of butter
  • A handful of fresh parsley chopped
  • 8 oz spaghetti or linguine

Instructions

Sauté the Garlic

  • Start by setting your Instant Pot to the sauté mode.
  • Add the olive oil and minced garlic, and stir for about approximately 2-3 minutes.
    2 tablespoons of olive oil, 4 cloves of garlic

Add the Liquid:

  • Pour in the chicken broth (or white wine if you prefer) and lemon (or lime) juice.
    1 cup of chicken broth or white wine, The juice of one small lemon or lime
  • Make sure to scrape any bits stuck to the bottom of the pot to prevent the dreaded "burn" message.

Add the Pasta:

  • Break the spaghetti in half and add it to the pot, ensuring all the noodles are submerged in the liquid.
    8 oz spaghetti or linguine

Cook the Shrimp:

  • Layer the shrimp on top of the pasta, seasoning with salt, pepper, and red pepper flakes if you like a little heat.
    1 pound of large shrimp, Salt and pepper to taste, 1 teaspoon of red pepper flakes

Pressure Cook:

  • Secure the lid on your Instant Pot and set it to manual high pressure for 5 minutes.

Quick Release and Add Final Touches:

  • Once the cooking time is up, perform a quick release to avoid overcooking the shrimp.
  • Stir in the butter until it melts and coats the pasta and shrimp. Taste and adjust the seasoning if necessary.
