Easy Shredded Chicken Enchiladas

Ingredients

  • 2 pounds boneless and skinless chicken breast or thigh
  • 2 tbsp southwest seasoning
  • 1 tbsp Mrs. Dash Original seasoning
  • 15-20 medium soft corn tortillas
  • 28 oz enchilada sauce
  • 2 cups sharp cheddar cheese shredded
  • 1 cup Italian cheese blend cheese shredded.
  • oil to fry with

Instructions

  • Place the chicken into a bake dish, and season the chicken with the southwest seasoning and Mrs. Dash seasoning. Be sure to season both sides.
  • Cover the bake dish, and place the chicken in the oven on 375 for 30-40 minutes.
  • Once the chicken is done, shred the meat.
  • Pour a little oil into a pan , and turn the heat to medium. Fry each tortilla until it softens, then place the tortillas to the side.
  • Lay the tortillas on a flat surface, then add chicken in the middle of the tortillas. Roll the tortillas.
  • Pour 1/3 of the enchilada sauce in the bottom of a bake dish.
  • Place the enchiladas in the bake dish along with the sauce.
  • Once all of the enchiladas are in the bake dish, pour the remaining enchilada sauce over the enchiladas.
  • Sprinkle the cheese over the enchiladas, and if there is any chicken left over, place that on the top as well.
  • Cover the bake dish, and bake in the oven on 375 for 25-30 minutes.
  • Let the enchiladas sit for 5 minutes before serving.
