Place the chicken into a bake dish, and season the chicken with the southwest seasoning and Mrs. Dash seasoning. Be sure to season both sides.
Cover the bake dish, and place the chicken in the oven on 375 for 30-40 minutes.
Once the chicken is done, shred the meat.
Pour a little oil into a pan , and turn the heat to medium. Fry each tortilla until it softens, then place the tortillas to the side.
Lay the tortillas on a flat surface, then add chicken in the middle of the tortillas. Roll the tortillas.
Pour 1/3 of the enchilada sauce in the bottom of a bake dish.
Place the enchiladas in the bake dish along with the sauce.
Once all of the enchiladas are in the bake dish, pour the remaining enchilada sauce over the enchiladas.
Sprinkle the cheese over the enchiladas, and if there is any chicken left over, place that on the top as well.
Cover the bake dish, and bake in the oven on 375 for 25-30 minutes.
Let the enchiladas sit for 5 minutes before serving.
