Brussel Sprouts, Butternut Squash, and Bacon
Brussel sprouts, butternut squash, and bacon make a perfect holiday side dish. Flavorful and roasted to perfection, this dish will be a highlight at your dinner table!

Servings 8 servings
- 2 lbs brussel spouts
- 1.5 lb butternut squash peeled & sliced
- 1 medium white onion sliced
- 1 tsp kosher salt
- 1 tsp ground black pepper
- 1/2 tsp red pepper flakes
- 1/2 lb smokey pork bacon OR turkey bacon & 1 tbsp vegetable oil
Chop the bacon, then fry over medium heat until crisp,
Remove the bacon from the pan, but reserve the bacon grease.
Combine the butternut squash, onions, and brussel sprouts.
Season with salt, black pepper, and red pepper flakes.
Next drizzle the bacon fat, all over the veggies.
Toss the ingredients, then pour out in a bake dish or cookie sheet.
Roast, uncovered, in the oven for 20 minutes on 400 F.
Remove from the oven, and add the veggies into your serving dish.
Sprinkle the crisp bacon on top.
